MARMALADE GLAZED CHRISTMAS HAM
This Christmas Ham recipe is a customer favourite at Florian, but it is also an easy and impressive centrepiece for your Christmas Table.
Ingredients:
1 Large Leg of Ham
For the Glaze:
1 Cup of Marmalade
1/2 Cup of Orange Juice
1/2 Cup of Maple Syrup
1tsp Salt
1/2 tsp Ground Nutmeg
1/4 tsp Ground Clove
Cracked Black Pepper
Process:
1. Set oven to 180 Degrees
2. Place all ingredients for the glaze in a bowl and mix well until combined.
3. Remove the skin from the leg of ham and trim away excess fat coating, leaving approximately a 1cm layer of fat covering the meat.
4. Score in a cross-hatch pattern across the whole surface of the leg.
5. Line a large deep oven tray with foil and sprinkle with cooking salt to prevent tray from smoking with ham fat drippings. Place a wire rack in the oven try and place the ham on top. Brush generously with the glaze leaving around half of the mixture for later use.
6. Place the ham in the oven, glazing every 30 minutes and rotating with each glaze to ensure even caramelisation.
7. Roast Ham until it develops a deep golden crust, approximately 2 hours.
8. Carve and serve!
