As the days grow cooler, Venue Manager Sam Bennetts stirs up some of his favourite seasonal cocktails—perfect for adding a splash of warmth to your autumn evenings.

Negroni
30ml of Campari
30ml of chosen Gin
30ml of a vermouth (in this case we use Antica Formula which has a rich velvety texture).
Measure all ingredients into your glass and stir before topping up with ice, and garnishing with a slice of orange.
Perfect to drink with cured meats or bold cheeses

Martini
60ml of Gin
10ml of a dry vermouth
2 dashes of orange bitters
Add all ingredients to a pitcher filled with ice and stir for 30 seconds to chill the liquid
Strain into a cold glass and garnish with some olives, sip away!

50ml of chosen vermouth (in this case its a local vermouth maker named Charles Oliver based in the western part of Victoria).
Pour over a glass filled with ice and add a slice of grapefruit or orange.
